At the head of the kitchens of the restaurant Le Balcon, Anthony Denon brings all the talent and know-how he has acquired working with Michelin-starred chefs such as Alain Ducasse and Jean-François Piège. The son of a Guadeloupean chef, he has cooking in his blood and has created a menu that reflects his personality: refined, plant-based, uncomplicated and deeply Mediterranean.
Committed to a responsible approach, Anthony uses local and seasonal produce to create inventive bistronomic recipes full of character. Each dish is an invitation to travel, a subtle balance between tradition and modernity, land and sea, Provence and the Mediterranean.
